Gelatin is a protein that forms when an animal’s skin or connective tissue is boiled. Although rare, allergic reactions to gelatin have been reported.
Allergy to gelatin is a common cause of an allergic reaction to vaccines, many of which contain porcine (pig) gelatin as a stabilizer. If you have experienced symptoms of an allergic reaction after eating gelatin, talk to your healthcare provider before getting vaccinated. People with a known severe gelatin allergy should avoid vaccines that contain gelatin.

There are many alternatives to gelatin if you are allergic to it. First, seek products labeled as truly vegan that do not contain any animal proteins. Also, some ingredients to replace gelatin while cooking are:
Agar Agar Carrageenan Vegetable Gums Pectin
An alternative to the flu shot is the flu nasal spray. It’s just as effective and doesn’t contain gelatin. For other medications, opt for pills that are not coated in gel.

Although most commercial gelatin sold is made from animals, there are forms of gelatin to fit all types of diet restrictions, including vegetarian and kosher.
But that doesn't help much if you cannot eat the gelatin itself!

The worst allergic reaction is anaphylaxis.
While the chance of anaphylaxis is slim with an allergic reaction to gelatin, it is possible. Anaphylaxis is a severe whole body allergic reaction. When this occurs, there will be massive swelling in the face and throat almost immediately. The swelling will be so severe that it can block the airway and make breathing almost impossible. Someone experiencing anaphylaxis will also have a fast drop in their blood pressure that can put them into anaphylactic shock. This can be fatal if medical treatment is not immediately sought.

Some packaged products don’t label gelatin. It is often referred to as 'hydrolyzed animal protein'. Other hidden names for gelatin include collagen hydrolysate, denatured collagen and gelatina. Look out for these names when buying new products.
