Being allergic to meats like beef, pork and lamb is rare; and can be difficult to identify. These allergies are usually attributed to a sugar found in meat called alpha-galactose (alpha-gal).
If you're allergic to one type of meat, you may be allergic to others - such as pork and poultry. A small portion of children being allergic to milk are also allergic to meat. Talk to your doctor to see if further testing of other foods is needed.

Some cases of meat allergy can be caused by the Alpha-gal syndrome, a recently identified type of food allergy to red meat. In the United States, the condition most often begins when a Lone Star tick bite transmits a sugar molecule called alpha-gal into the body. In some people, this triggers an immune system reaction that later produces mild to severe allergic reactions when they eat red meat. The Lone Star tick is found predominantly in the southeastern United States and most cases of alpha-gal syndrome occur in this region. The condition appears to be spreading farther north and west, however, as deer carry the Lone Star tick to new parts of the United States. Alpha-gal syndrome also has been diagnosed in Europe, Australia and Asia, where other types of ticks carry alpha-gal molecules. Researchers now believe that some people who have frequent, unexplained anaphylactic reactions — and who test negative for other food allergies — may be affected by alpha-gal syndrome. There's no treatment other than avoiding red meat. The Lone Star tick

One can also suffer from an allergy rlated to only certain types of red meat.
Pork allergy is not always a true allergy, but rather a cross-reactive response to cats. Known as pork-cat syndrome, the allergy is triggered by the similar molecular structure of cat and pork albumin. While people allergic to pork are typically allergic to cats, the opposite is not true. As such, the cat allergy is considered the true allergy, while the pork allergy is the cross-reactive response.

Some people with red meat allergy say it's a blessing in disguise, since we are constantly bombarded with propaganda about how unhealthy red meat really is, so they can catch two birds with one stone when they switch to poultry and fish.

Eating too much red meat or others foods high in purines can cause gout flare ups.
