Wilson’s disease is a hereditary disorder in which the body retains too much copper. Copper is a trace mineral in the body. This means it is essential for good health, but only a tiny amount is needed. When excess copper accumulates, it is stored in the eyes, brain, kidneys and liver. Excess copper collecting in the liver causes cirrhosis of the liver, which is a serious, life-threatening condition. However, Wilson’s disease is treatable.
The important thing for patients with Wilson's disease is to avoid or seriously limit the intake of copper-rich food, such as
Liver Oysters Spirulina Shiitake Mushrooms Nuts and Seeds Lobster Leafy Greens Dark Chocolate

Food with a low copper content include:
Beef Eggs White meat turkey and chicken Cold cuts and frankfurters that do not contain pork, dark turkey, dark chicken, or organ meats Most vegetables including fresh tomatoes Breads and pasta from refined flour Rice Regular oatmeal Cereals with <0.1 mg of copper per serving (check label) Butter Cream Margarine Mayonnaise Non-dairy creamer Sour cream Oils Salad dressings (made from allowed ingredients) Most milk products Milk flavored with carob Cheeses Cottage cheese Jams, jellies, and candies made with allowed ingredients Carob Flavoring extracts Coffee Tea Fruit juices Fruit-flavored beverages Lemonade Soups made with allowed ingredients

If your tap water comes from a well or runs through copper pipes, have the copper levels in your water checked. Water sitting in copper pipes may pick up copper. Run the water to flush the pipes before you drink the water or use it for cooking. You may need to use a water filter to remove copper from your tap water or even boil your drinking water.

Boiling food, eg beans, reduces copper content by almost 50%, but make sure that you don't use any copper pots or pans!

Nausea, vomiting, and loss of appetite Yellowing of the skin and eyes Dark urine Bloody, black stools or unusually light-colored stools Vomiting blood Abdominal swelling Itching that doesn’t go away Swollen feet or legs Red palms Trouble sleeping Confusion

Drinking water may contain elevated levels of copper. The copper content of your water should not be more than 0.1 ppm. If you have copper plumbing, the copper content of your water can be reduced by running the water for a while before using it.
